New opportunity as Junior Sous Chef with this established venue - we're looking for experiences in busy luxury restaurant environments,a good knowledge of Italian &/ French cuisine, a keen mentor with positive leadership style!
This role would suit an experienced restaurant Senior CDP or strong CDP.
Duties:
Keep abreast of trends in the culinary industry;
Assist in developing & analysing recipes to assign prices to menu items, based on food, labour cost, & overhead costs;
Assist in design of special product offerings to maximize usage of stock & to make use of slow moving stock;
Assist in coordinating planning, budgeting, or purchasing for all the food operations within establishments to ensure efficient operation;
Monitoring and controlling resources & assist in overseeing the spending of money;
Providing guidance & direction to subordinates, including training, coaching, mentoring, setting and monitoring performance standards and discipline;
Assist in ensuring that SHEQ & FCS requirements for each kitchen division are met.
