Seaton House, in partnership with the renowned Ondine, Edinburgh by Roy Brett, is set to redefine dining in St Andrews with our upcoming 5-star luxury hotel, opening in February 2025.

We are seeking a seasoned Bar Manager with experience in managing an extensive whisky list as well as collaborating on a wine list.

This role demands a leader who can maintain high standards of service and quality, inspired by Ondine’s celebrated reputation in Edinburgh.

What You'll Do:

• Manage daily operations of the bars within Seaton House, ensuring seamless service and guest satisfaction.
• Lead, train, and inspire a team of bar professionals.
• Collaborate with the Ondine team to uphold the vision and standards of Ondine.
• Develop marketing and business strategies to enhance the guest experience and increase profitability.
• Manage guest relations, and accommodate special requests with the highest level of professionalism.
• Ensure compliance with all health, safety, and licensing regulations.

What We're Looking For:

• Proven experience as a Bar Manager in a high-end or potentially rosetted restaurant/hotel
• Excellent leadership, team management, and staff training skills.
• Outstanding customer service skills and the ability to handle high-pressure situations.
• Familiarity with restaurant management software and Point of Sale systems.
