About the Role Manage and lead the wine programme across all areas of the hotel. Working closely with the Director of Bars and the Director of Food & Beverage and other members of the leadership team to establish a dynamic wine offering. This role will oversee and ensure excellence in all aspects of staff, service, guest and greater community engagement with wine/beverage as it pertains to The Chancery Rosewood.
Key Responsibilities - Work with the marketing team to promote the wine program through social media, events, and promotional materials.
- Monitor and assess wine quality and service standards, ensuring consistency and excellence throughout the dining experience.
- Develop and manage the wine program budget, ensuring profitability while maintaining quality.
- Stay updated on industry trends, emerging wines, and competitor offerings to keep the wine program innovative and competitive.
- Build and maintain strong relationships with wine suppliers and distributors to ensure the best selection and pricing.
- Plan and execute wine tastings, dinners, and special events that showcase the wine program and attract guests.
- Interact with guests to provide personalised wine recommendations and enhance their dining experience.
- Oversee wine inventory, including ordering, storage, and stock rotation, to maintain quality and minimise waste.
- Conduct regular training sessions for the team on wine knowledge, service techniques, and food pairings to elevate the overall guest experience.
- Curate and continuously enhance the wine list, ensuring a diverse selection that aligns with the hotel's culinary offerings and guest preferences.
- Develop and implement standard operating procedures to optimise efficiency and the quality of service.
- Responsible for Communicating on a regular basis on the performance of the wine programming, successes, concerns, any issues and support needs
- To ensure that all stocks and supplies are requested in time, and that correct stock levels are maintained and stored under optimum conditions.
- Complies and adheres to the Rosewood company policies.
- Takes on other tasks in addition of the ones stated, in a reasonable framework.
- Evaluates local, national and international market trends, vendors and other hotel/restaurant operations constantly to make sure that the hotel's own operations remain competitive and cutting edge.
- Collaborate with the management team to develop and implement marketing initiatives, promotions, and special events to drive customer traffic and revenue.
- Is a "brand ambassador" at all times and ensures brand integrity and clarity are always maintained.
- Models the company's culture, vision, mission and core values at all times.
About you - Minimum of 3 years in the wine industry, preferably in fine dining or luxury hospitality
- Completion of recognised wine education programs (e.g., WSET, Court of Master Sommeliers).
- Excellent communication and training abilities
- A genuine enthusiasm for wine and commitment to continuous learning about industry trends.
- Preferably you'll have had expose of experience of being part of a pre-opening team.
